3 Easy Fall Recipes For The Family

Fall is here! I personally love everything about it including the FOOD! I wanted to share 3 easy fall recipes for the family that you can make any day of the week. They are crowd pleasing, easy to prep and prepare, AND they  yield leftovers (unless you are feeding an army)!


Chuck Roast with Carrots and Red Potatoes


  • Crock Pot
  • Dutch Oven



  • 1 chuck roast
  • 1 small bag of baby carrots
  • 1 small bag of red potatoes
  • 1 packet of onion soup mix replacement for yellow onion
  • 1 cup of beef broth
  • 1 can of cream of mushroom soup
  • Seasonings to taste include but are not limited to: garlic salt seasoning salt, pepper, minced onion, and parsley)
  • 1 tbsp of Oil of choice I personally use vegetable oil
  • ½ cup of flour



  • Rinse off meat and vegetables
  • The amount of vegetables used is based on personal preference
  • Season meat and use a fork to pierce the meat throughout
  • Place the meat in a crockpot or dutch oven
  • Top the meat with the carrots, potatoes, chopped onions, cream of mushroom soup, broth, onion soup mix, and seasoning(s) of choice
  • Cook on a low setting for 6-8 hours or high for 4-6 hours. Low and slow is best!
  • Serve over rice or by itself

Chicken and Vegetable Soup


  • Crockpot


  • 6-8 Chicken Thighs Bone-in w/ skin
  • 1 pkg Soup Vegetables Mixed vegetables or canned vegetables of choice are also optional
  • 1 can Diced Tomatoes
  • 1 1/2 cup chiken broth
  • 1 can cream of chicken soup optional
  • 1 packet onion soup mix


  • Rinse chicken and lightly season Place chicken in a large pot, with ½ cup water, 1 cup of chicken broth and cover and cook until meat has fallen off of the bone Remove bones Place the remaining ingredients in the pot and stir to combine the chicken Avoid draining Simmer on low for at least 30 minutes Season to taste


Optional Seasonings include:
salt, garlic salt, pepper, parsley, onion powder.

Ground Turkey Chilli


  • Crockpot
  • Large Pot


  • 1 pkg ground turkey
  • 1 can Mild Chilli Beans
  • can Country Style Baked Beans
  • 1 can Black Beans
  • 1 can Diced Tomatoes Diced tomatoes w/ garlic recommended
  • 1 packet McCormick Chilli Seasoning Generic will work as well
  • 1/2 cup Diced Red Onions
  • 1/2 cup Diced Green Peppers
  • 1 TBSP Chilli Powder


  • 1. Brown Ground Turkey with onions and peppers 2. Drain mixture (if necessary) 3. Pour in all canned goods 4. Sprinkle Chilli Seasoning Packet and Chilli Powder over the mixture 5. Stir all ingredients well to ensure that flavors combine well 6. Simmer the mixture down to a slow boil


Chilli can be served alone but pairs well with cornbread and/or cheese toast.

You can always add to or takeaway from each recipe to meet your family’s taste and specifications.
